Pork Burritos and Salsa

Pork-amount appropriate for # you are serving, fire guys figure 1/2lb per man.
(chops, steak, loin...whatever. We will ocassionally use bone in chops and leave the bones in for the simmering and remove before we put the salsa in)
1-2 yellow onions chopped course
1-2 tsps garlic
salt and pepper to taste
Cube the pork. place in sauce pan or skillet. Add onions and garlic and enough water to cover the meat.
Bring to a boil then reduce heat to simmer.
Simmer, stirring occasionally, until all water is boiled out and meat is very tender. (1 1/2 to 2 hours)
Pour entire blender full of salsa into meat and simmer another 30-45 minutes.
serve with warm tortillas, cheddar cheese, more salsa and sour cream.

Salsa
1 bunch cilantro
1 bunch green onions
1/2 jalapeno
1 tbs garlic or 3 cloves
juice from 1/2 lemon
1 tsp taco seasoning
dash salt
28 ounce can of diced tomatos
roughly chop 3/4 of the cilantro, discarding stems
chop green onion with equal amount white and green stem.
chop jalapeno
place above in blender
add garlic, salt, seasoning and tomatos.
Pulse blender on chop until contents are well mixed. Don't over blend or salsa will be runny.
